Cauliflower and Broccoli in Spicy Sauce Recipe
It is the creamy and spicy chick pea sauce that makes this cauliflower and broccoli dish taste like "more please"; add grilled lamb chops and dinner rolls and you have a meal good enough for company.

INGREDIENTS

10 oz bag frozen cauliflower
10 oz bag frozen broccoli
1-cup chickpeas (cici/garbanzo beans) cooked or ½ of 15/16 oz can
1/2 cup plain yogurt, do not drain
1/2 tspn cayenne pepper
4 tbsn water
2 tspn light olive oil
2 tspn lemon juice
2-3 garlic cloves peeled and blanched to loose rawness
1/2 tspn cumin
Salt and pepper to taste

DIRECTIONS

In blender (or food processor) mix together chick peas, blanched garlic gloves, water, lemon juice, yogurt, olive oil, cumin, cayenne pepper, salt and pepper. Blend until smooth. Remove sauce from blender into small bowl and set aside. Prepare vegetables.

Place cauliflower and broccoli in microwave steamer bags (Glad brand “Steaming Bags are excellent) and cook for 4 to 7 minutes depending on your microwave. The vegetables should be tender crisp to the tooth. Be careful when opening steamer bags, open away from your face and step back to allow steam to escape. Place vegetables in a large shallow serving dish. Spoon the sauce over the mixed vegetables and toss gently to coat. Serve with chicken or lamb.

Makes 8 servings.

*This spicy chick pea sauce is delicious over Brussels sprouts. Even people who normally do not like Brussels sprouts may enjoy them served this way.



Broiler Grilled Lamb Chops

INGREDIENTS

8-1 inch lamb chops, preferably loin lamb chops
1 tbspn balsamic vinegar
2 garlic cloves, finely minced
1 tbspn Dijon mustard
1/4 cup olive oil
2 tspn dried basil
Salt and pepper to taste

DIRECTIONS

In small bowl, mix mustard, vinegar, garlic and pepper together in a small bow and slowly add olive oil while whisking briskly to emulsify. Add dried basil.

Dry lamb chops, place in a shallow rimmed pan and spoon liquid mix over both sides. Cover pan with clear wrap and refrigerate for 2 hours, turning on the second hour. Place chops in greased grilling pan and place under broiler with 4 inches between heat and pan. Broil for 4 to 6 minutes per side or until done. Add salt and pepper to taste.

Makes 8 servings.
