Southwestern Turkey & White Bean Chili Recipe
Spicy Southwestern Turkey & White Bean Chili is perfect cold weather fare and can be put together in less than 30 minutes. It starts with a few cans from the pantry shelf, a few common spices, and cooked turkey breast from the Slow Cooker Turkey Breast Module. This delicious chili is healthy, too; it has only 2 grams of fat and 6 grams of fiber per serving. It also supplies Vitamin C, Iron, and protein.

This flavorful chili is fun to serve since there are condiments to stir in such as sour cream, cheese, tortilla chips, and green onions. It makes a great dish for a casual get-together, and is hearty enough for hungry armchair quarterbacks on Superbowl Sunday, or trick-or-treaters visiting the annual family Halloween Boo-ffet. It’s easy enough, however, to serve as a quick weeknight supper.

12 Servings

1 14 oz. can tomatoes and green chilies
2 15 oz. can great Northern beans, rinsed and drained
1 4 oz. can chopped mild green chilies
1 15 oz. can corn
1 6 oz. can tomato paste
1 teaspoon sugar
3 tablespoons chili powder
1/4 to 1/2 teaspoon freshly ground black pepper, (or to taste)
6 cups water
1/4 cup dehydrated onion flakes
2 tablespoons granular chicken bouillon

2 to 3 cups turkey breast from the Slow Cooker Turkey Breast Module, cut into small chunks

Condiments:
  • Sour cream

  • Chopped fresh cilantro

  • Grated cheddar jack cheese

  • Tortilla chips

  • Chopped Green Onions

    1. Place all ingredients except turkey breast in a large Dutch oven or soup pot.

    2. Bring the mixture to a boil, stirring to mix well.

    3. Turn the heat to a simmer and let cook 15 minutes

    4. Stir in the turkey, bring back to a boil, and serve with the condiments.
