There are two casinos - one in Dodge, one in Empire. In both you're playing Texas Hold'em Poker. You can even cheat if you want to risk it, although you can win without doing that. They give you images of the players' faces so you can see what they're thinking. We never tried to "figure out what they held", again if you know poker it's pretty easy to just play and win.

Dodge City 1:
The first tournament is free to enter, and you win $10 if you beat the other players. You gotta know when to hold them, know when to fold them, know when to walk away, and know when to run ...

Dodge City 2:
When you win the first tournament, you can enter a second one for free, with a prize of $20. If you know the rules, it's pretty easy to win. You never count your money when you're sitting at the table - there'll be time enough for counting when the dealing's done.
