Serve roasted spiced plums over ice cream, cheese cake or pound cake. Double recipe and serve with pork roast as a relish or side dish. Just delicious.
4 plums, halved
1/2 cup orange juice
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon ground cumin
1/8 teaspoon ground cardamom
1 tablespoon slivered almonds, toasted
Preheat oven to 450°
1. Place plum halves, cut sides up, in an 11 x 7-inch baking dish coated with cooking spray.
2. Combine orange juice, sugar, cinnamon, nutmeg, cumin, and cardamom, and stir well.
3. Drizzle orange juice mixture over plums.
4.Bake at 450° for 20 minutes. Top with toasted almonds.
Serves 4 (serving size: 2 plum halves and 3/4 teaspoon almonds)
