This is a basic Thai Spring Roll Dipping Sauce, but it is great on Thai style pot stickers, Fresh Salad Rolls and even on a cucumber salad.
Thai 4 Flavour Peanut Dipping Sauce (Thai Spring Roll Dipping Sauce)
1/4 cup sugar
1/2 cup water
1/2 cup vinegar
2 tbsp fish sauce
2 tsp red chile pepper flakes
1/2 carrot, coarsely grated
1/4 cup peanuts, coarsely chopped
In a small saucepan combine the sugar and water. Bring to a boil. Reduce the heat and simmer for 8 to 10 minutes until the sugar is dissolved. Remove from heat and add the vinegar, fish sauce and red chile pepper flakes. Mix well. Pour the sauce into a serving bowl, chill and top with grated carrots and chopped peanuts just before serving.
Peanut Dipping Sauce
1/2 cup peanuts, finely chopped
1/4 cup hot water
2 tbsp light soy sauce
2 tbsp toasted sesame oil
1 tbsp white vinegar, (coconut vinegar is great)
1 tbsp lime zest
2 tsp sugar, (date palm if available or brown sugar)
1/8 tsp ground roasted red Thai chile pepper (adjust to your taste)*
Place all of the ingredients in a small bowl abd mix well.
Or place ingredients in a blender and blend until smooth.
Serve with fried chicken or skewers of grilled meats and seafood.
*Roasted Thai Chile Pepper can be found in South East Asian Markets, or dry roast chiles in a hot skillet on your stove, keep them moving until they begin to smoke a little, cool, and grind, remove seeds for mild flavour.
Lime Dipping Sauce
2 tbsp cup Thai fish sauce
3/4 cup fresh lime juice
2 tbsp chopped fresh cilantro
2 tbsp chopped fresh basil
2 tbsp chopped fresh mint
1 tsp peeled and grated fresh ginger
Place ingredients into glass bowl and mix together.
This dipping sauce can be used with snacks such as spring rolls, dumplings, salad rolls, and other similar Thai snack foods.
Sesame and Lime Dipping Sauce
1 level tsp toasted sesame seeds
1 tbsp sesame oil
1 tbsp fresh lime juice
1 1/2 tbsp fish sauce
1 tbsp soy sauce
1 medium Thai Red Dragon chile, deseeded, finely minced
Place all ingredients in glass bowl, mix and serve with Thai snakes like spring rolls, fish cakes (tod Mun) and other snakes.
