Irish Soda Bread Recipe

I can't think of anything better than warm Irish soda bread with butter and jam and a nice cup of coffee, hot chocolate or chai. Every March without fail, my friends mom used to make this Irish Soda Bread for me until she died some years ago.



This recipe takes less than 1 1/2 hours from start to finish and makes 2 loaves, one to keep one to share. Col's moms Irish Soda Bread:

Ingredients

5 cups sifted all-purpose unbleached flour
3/4 cup sugar
2 1/2 cups raisins, soaked in water for 15 to 20 minutes and drained
2 teaspoons baking powder
1 teaspoons salt
1 teaspoon baking soda
2 1/2 cups whole milk
1 stick of sweet butter (1/4 pound)
2 medium eggs, beaten

Directions

Preheat the oven to 350 degrees

1. Mix all dry ingredients together. Blend well. Cut butter into the and mix throughly. Add raisins and mix well.

2. Add the milk and egg mixture. Blend until completely mixed and moistened. Divide dough, smooth to shape and place in two buttered loaf pans.

2. Bake approximate 1 hour. Test doness with toothpick then remove from oven. Let sit for for 5 minutes.

Remove from pans onto wire cooling rack. Enjoy!
