Apple Sausage Breakfast Casserole

  • 1 lb. breakfast sausage links
  • 6 medium apples - core and slice but do not peel
  • 1 T. lemon juice
  • 1/3 cup brown sugar
  • salt & pepper to taste

Preparation -
Spray a 2 quart casserole with non-stick cooking spray. Cut the sausage links in half. Brown the sausage in a skillet, then drain off any excess fat. Toss the apples with the lemon juice. Add the apple mixture to the sausage. Place the mixture in the prepared casserole dish. Gently stir in the brown sugar, salt and pepper. Cover and bake in a preheated oven at 350° for 45 minutes. Remove from the oven and let stand for about 10 minutes before serving.
