2 cans refrigerated pizza crust ( from the dairy case)
1/2 lb. mozzarella cheese - cut into 48 cubes
48 thin slices pepperoni
1/4 cup olive oil
1-1/2 tsp. Italian seasoning
2 tsp. grated Parmesan cheese
marinara sauce
Preparation - Spray a 9" x 13" baking pan with nonstick cooking spray. Remove the pizza dough from the cans and unroll it. Starting at center, press out each piece of dough into an 8" x 12" piece. From the 8" side, slice each piece into 4 strips; then slice from the 4 strips to form 24 squares. Top each dough square with one slice of pepperoni and one mozzarella cheese cube. Fold each piece in half, diagonally, to form triangles and completely cover the pepperoni and cheese. Press the edges together to close and seal each one. Place the filled, sealed, triangles - seam side down - sides touching in the prepared baking pan. Whisk the olive oil, seasoning and Parmesan together. Drizzle the seasoned oil over the filled dough. Bake at 400º degrees for 15 to 20 minutes or until light golden brown. Place the pizza appetizers on a serving platter and insert a large toothpick in each one. Serve warm with marinara sauce, for dipping, on the side.
