Meatloaf - Microwave Oven Recipe

Here's a recipe for extra moist meatloaf, made in a microwave oven. Baking it in a microwave-safe funnel or bundt type pan, shortens cooking time and helps assure even doneness.

  • 1-1/2 lb. lean ground beef
  • 2 eggs - well beaten
  • 1 medium onion - chopped
  • 1/3 cup chopped green bell pepper
  • 1/2 tsp. dry mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup ketchup

Preparation -
Combine all ingredients except the ketchup. Place the meat mixture in a funnel type or bundt type cake pan made for the microwave. Or...Place a custard cup in the center of a microwave safe plate and arrange the meat mixture in a ring around it. Microwave for 5 minutes on full power, then for 10 minutes on 50% power. Top with ketchup and cook for 2 to 4 additional minutes. Let stand for 5 minutes before serving.
