Irish Potato Pie

Irish Potato Pie

  • 6 to 8 potatoes (medium size)
  • 6 strips bacon
  • 8 to 10 green onions (scallions)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup shredded Cheddar cheese

Preparation -
Spray a deep 9" pie dish with non-stick cooking spray; set aside. Peel, slice and cook the potatoes until barely tender; drain and set aside. Fry the bacon until crisp. Remove the fried bacon to drain on paper towels. Snip the green onions into 1/2" pieces; saute in the bacon drippings until tender. Arrange half of the sliced potatoes in the bottom of the prepared pie dish. Sprinkle half of the salt and pepper over the potatoes. Crush the fried bacon. Scatter about half of the bacon on top of the sliced potatoes. Add half of the green onions. Top with half of the grated Cheddar. Repeat the layers with the remaining ingredients. Bake in a preheated oven at 400║ for 30 minutes. Serve immediately.
