Scallop Kabobs

Scallop Kabobs

  • 1 lb. bay scallops
  • 2 medium size green bell peppers - seeded, washed and cut into 1" pieces
  • 1 pint firm cherry tomatoes
  • 1/4 cup vegetable oil
  • 1/4 cup lemon juice
  • dash of garlic powder

Preparation -
Precook the bell pepper pieces in a microwave oven on high power for 2 minutes . Alternately thread the peppers, cherry tomatoes and scallops onto skewers. Whisk together the lemon juice, vegetable oil and garlic powder. Brush the mixture over the kabobs. Grill the kabobs over medium hot coals for about 12 minutes, turning and basting frequently.
