This is a deliciously sinful dessert! Fire up your next dinner party.
Years ago, we were having a wonderful week at the Hotel Solaria in Marilleva. This are is best known as a ski resort, but this was July. In addition to enjoying the crisp, mountain air, we made friends with the restaurant's capocameriere and head chef.
Soon I was discussing cooking tips and exchanging recipes. It was sometimes a challenge since the head chef would often list ingredients as, "Take some...." He knew how much by years of doing. Here is one of the fantastic desserts the chef created for us that week.
Strawberry and Kiwi Flambč
Ingredients
- 1 stick butter, unsalted
20 strawberries, medium, cut in half- 8 kiwi, peeled and sliced
- 3 Tbs sugar
- 1/2 cup blue Curaçao
- 1 cup orange juice
- 1 oz Cognac
- 1 Tbs lemon juice
- 1/4 cup pine nuts
- 4 cups vanilla ice cream, in individual serving dishes
Directions
- In a large skillet, over medium-high heat, melt the butter.
- Add the sugar and caramelize--Heat the sugar until it liquefies and becomes a clear syrup, continue cooking until it becomes a golden color.
- Add the orange and lemon juices. Heat and simmer for 5 minutes.
- Add the kiwi to the pan and stir gently. Allow to cook for 2 minutes.
- Add the strawberries and stir gently.
- When the sauce thickens, add the pine nuts, blue Curaçao and cognac.
- Ignite with a long match.
- When the flame dies, stir and serve immediately over vanilla ice cream.
Note: For a spectacular presentation, bring the pan to the table and ignite. Be careful that nothing is over or near the flames. Stay away from walls and window treatments.
