Preparation - Combine the lemon juice and vinegar in a bowl. Add the raisins. Let soak for about 15 minutes. Wash and core the apples - Do not peel. Spray an 8" or 9" round or square baking dish with non-stick cooking spray. Place the apples in the prepared baking dish. Add the brown sugar and pecans to the bowl with the lemon juice, vinegar and raisins; mix well. Stir in the ham. Stuff the apple cavities with the mixture. Place any amount that does not fit in the cavities, on top of and around the apples. Place 1 T. butter on top of each filled apple. Cover loosely with foil and bake in a preheated oven at 350º for 40 to 45 minutes or until the apples are tender.
