Frosted Cauliflower

Frosted Cauliflower


  • 1 medium size head cauliflower
  • 1/2 cup mayonnaise - regular or lite
  • 1-1/2 tsp. prepared yellow mustard
  • 1/3 cup grated cheddar cheese
  • 1/2 tsp. salt.
  • paprika

Preparation -
Remove the stem and the lower end of the core from the cauliflower, leaving the inner core of the head with the florets attached. Pierce the core with the tip of a sharp knife a few times to make cooking faster. Rinse the head under cool running water. Place the head in a deep microwave safe casserole dish. COVER and cook on high power - about 6 minutes for a 1 pound head. Let stand, covered for about 3 minutes. Drain any visible water from the dish. Mix the mayonnaise, mustard, cheddar, and salt together. Spread the mixture on the cooked head of cauliflower. Heat, uncovered, on about 70% power (medium high), for about 1-1/2 minutes, or until the "frosting" is hot and bubbly and the cheese is melted. Sprinkle very lightly with paprika and serve.
