Frozen Banna Fluff Recipe

This recipe is from Book Two of Dr. Joel Fuhrman's Eat for Health book set. It is a great replacement for vanilla or chocolate ice cream since it is high in nutrients, low in fat and calories. So clear the ice cream out of your refrigerator and make this your new "treat" food. It is far more nutritious than ice cream, tastes very similar to vanilla flavored ice cream and has a very creamy and rich taste from the bananas.

1/4 cup vanilla soy milk
2 ripe bananas, frozen*
dash of vanilla extract
2 tablespoons ground flax seeds

Place the soy milk in the food processor, with the S blade in place. You can also use a Vita-mix or Magic Bullet for this recipe.

Turn on the machine and drop in small slices of the frozen bananas, one by one. Add vanilla and combine until smooth and creamy.

Sprinkle ground flax seeds, chia seeds, walnuts or any other crushed nuts on top to give it a "sundae" taste.

You can make a chocolate version by adding 2 tsp cocoa powder or 2 tsp of carob powder.

You can make a fruit flavored version by adding frozen blueberries, mango, strawberries or cherries.

This recipe makes two servings. One serving contains 158 Calories, 3.9g of Protein, 30.5g Carbohydrates, 3.9g of Fat, 19.8mg of Sodium. The MANDI score for this recipe is 2.5.

If you follow Dr. Fuhrman's "Eat for Health" you will find that he gives a MANDI score to his recipes. MANDI stands for Menu Aggregate Nutrient Density Index and is similar to the Aggregate Nutrient Density Index. The MANDI score measures micronutrients in foods and is meant to encourage you to eat a high nutrient diet. Using the MANDI system will help you to make sure you are getting a balanced Plant Based Diet with a variety of nutrients.

*Bananas should be peeled prior to freezing. I recommend freezing a couple of pounds at a time so you always have them on hand since they are the perfect base to any smoothie. You can put them in an airtight container like Tupperware, Lock n' Lock or a freezer bag.
