"Baked" Nectarine Pancakes

"Baked" Nectarine Pancakes

  • 4 egg whites
  • 2 egg yolks
  • 3 T. milk
  • 2 T. whole wheat flour
  • 1 T. lemon zest
  • 1 T. honey
  • 1 large nectarine, peeled, pitted and thinly sliced
  • 1/4 tsp. cinnamon

Preparation -
Spray an 8" x 8" square or a 9" round microwave-safe baking dish with non-stick cooking spray; set aside. In a mixing bowl, using an electric mixer, beat the egg whites until stiff peaks form; set aside. In another mixing bowl, beat the egg yolks, milk, flour, lemon zest, and honey together until smooth and well blended. Gently stir about half of this mixture into the beaten egg whites. Gently stir this into the remaining egg yolk mixture. Pour the batter into the prepared baking dish. Arrange the nectarine slices on top. Sprinkle with cinnamon. Microwave on full power for 4 to 6 minutes or until set. Cut into squares or wedges and serve. Makes 4 servings.
