Mozzarella Chicken

Mozzarella Chicken

This is a microwave recipe. Serve with spaghetti topped with marinara sauce.

  • 4 boneless, skinless chicken breast halves
  • 1/2 cup milk
  • 1 cup dry bread crumbs
  • 1/4 cup flour
  • 2 T. olive oil
  • 1 cup spaghetti sauce
  • 1 cup shredded mozzarella cheese

Preparation -
Flatten and tenderize the chicken breast halves to about 1/4" thick, using a meat mallet. Mix the bread crumbs and flour together. Dip the flattened chicken in the milk, then in the bread crumb/flour mixture. Pour the olive oil into a large skillet. Heat the olive oil. Place the coated chicken breasts in the skillet and brown lightly on both sides, over medium high heat. Drain on white paper towels. Spray a 9" x 13" microwave-safe baking dish with non-stck cooking spray. Spoon about 1/2 cup spaghetti sauce into the bottom of the prepared dish. Arrange the chicken breasts on top. Spoon the remaining spaghetti sauce over the chicken. Sprinkle with the shredded mozzarella cheese. Cover with waxed paper and microwave on full power for 5 minutes. Rotate and the chicken in the dish for even cooking. Microwave, uncovered, on full power for about 5 to 7 more minutes or until the chicken is tender and completely cooked. (juices run clear) Cover and let stand for 2 to 3 minutes before serving.
