When things are hectic and crazy, the microwave can keep you from fast food. This recipe is quick and easy comfort food. This recipe is even better the next day.
Ingredients
- 1 onion, halved and cut in thin slices
- 1 cup frozen green beans
- 2 Tbs water
- 1 cup chicken broth
- 1 tsp fresh thyme, crushed
- 1 tsp fresh oregano
- 2 garlic cloves, chopped
- 3 Tbs flour
- 1/4 tsp black pepper, freshly ground
- 2 cups cooked chicken, cut into bite size pieces (or left over turkey)
- 1 14.5 ounce can diced tomatoes
Directions
- In a microwavable casserole dish mix together onion, garlic, green beans, and 2 Tbs water. Cook covered on full power for 3 to 4 minutes, until the onion is tender.
- Stir into the cassarole flour, chicken broth, thyme, oregano, and pepper.
- Cook uncovered for 2 to 3 minute, until the onion mixture is thick and bubbly. Stir every minute.
- Stir in chicken and tomatoes.
Cover and cook 5 to 7 minutes. - Let stand a few minutes and serve.
Note: When using the microwave there are some simple tips that will make the process easier.
- Arrange food in dish so that the thickest part is on the outside and the thinner toward the center of the dish. This will allow for more even cooking.
- Let foods such with baking powder in them stand a few minutes before cooking to allow the leavening agents to work.
- Don't use as much liquid -- if a recipe calls for milk and water, cut back on the water.
- Open covers away from you to release steam.
- If you cover it in the regular oven, cover it in the microwave too.
