Some of my favorite childhood cooking memories were cookouts! I loved helping my Mom make the marinades for the meat, and shooting hoops with my Dad while the food cooked on the grill. Here are three easy recipes for your familys next cookout. I hope your family will enjoy them as much as I did, and still do!
Grilled Marinated Chicken
Boneless Skinless Chicken Breast
Marinade: (This marinade can be made ahead of time and stored in the fridge for up to a month).
1 cup of oil
½ cup lemon of juice
1 Tablespoon garlic powder
2 Tablespoons of thyme
2 Tablespoons of basil
2 teaspoons of salt
2 teaspoons of paprika (optional)
1. Mix the marinade ingredients together well in a bowl. Place marinade and chicken in the refrigerator for at least 2 hours if possible. If not, itll still turn out fine.
2. Grill over medium low heat for 7-10 minutes, depending on the thickness of the chicken breast. Make sure there are no pink juices, or use a meat thermometer.
Halibut or your favorite fish
1 cup diced tomatoes, or 1 large tomato sliced into chunks
1 small onion, diced
1 tablespoon oregano
2 teaspoons pepper
1 teaspoon of salt
1 tablespoon of olive oil
1. Spray a sheet of tin foil with cooking spray.
2. Place fish on tin foil.
3. Spread diced tomatoes over fish.
4. Top the tomatoes with onions.
5. Season with salt, pepper, and oregano.
6. Add olive oil.
7. Grill for 6-8 minutes or until fish is cooked through.
Note: Grilling times for chicken and fish will depend on your particular grill, and the thickness of the meat. Check with someone in your grocery store's meat department if you have any questions.
Grilled Cinnamon Rolls
1 pack of crescent rolls
½ stick of butter
1. Unroll crescent rolls.
2. Melt butter in sauce pan.
3. Spread a little butter in each crescent roll, followed by a little (or
a lot) of cinnamon.
4. Roll the crescent the same way you would for a recipe such as Pigs in a Blanket.
5. Place on the grill for 4-5 minutes, until cooked through.
