My husband and I currently live with our “other children”, our Dobermans. Our children grew up and now live on their own. We have 5 beautiful granddaughters that I enjoy testing my healthy recipes on first! They usually love everything I cook, but sometimes they protest. This is when some of my “better” recipes have been born!
I have previous degrees in both law enforcement and paralegal studies. After losing my youngest daughter to complications from Cerebral Palsy in 2002, I decided to switch my degree to Nursing. The loss of my daughter was devastating to me, and depression took over for the first few years after her passing. I decided to seek outside help to re-assess my “purpose” in life, and realized that nursing and working in a pediatrics setting was what I wanted to focus my time and energy on. I’ve been in the Health Care industry for over 20 years, and nursing for 8 years. I’ve seen the wide-spread epidemic of childhood obesity first hand, and have become passionate in this particular cause.
I am currently an Ambassador for a wonderful and healthy lifestyle known as The Eat-Clean Diet and its creator, Tosca Reno www.eatcleandiet.com. I write for their Kitchen Table section, and my stories are often featured on the home page. I even won first place in The Eat-Clean Diet’s “Creation Station” contest this past summer when I re-created Tosca’s Zucchini Muffin recipe!
Through Tosca’s books and teachings over the past 3 years, I have learned that I have another passion: cooking clean and healthy for kids! I love to re-create unhealthy recipes that kids love. I turn them into healthy and nutritional foods and meals that nourish their little bodies but still have that same great taste! It’s important that kids eat healthy and still enjoy their food!
I think it’s important to get kids involved in every aspect of healthy cooking. I will share recipes, ideas, and tips for busy moms and dads (as well as age-appropriate recipes that your kids can assist with or cook themselves). Cooking for kids is truly my passion, and I enjoy having my granddaughters help me in the kitchen. It makes them feel so special to be included, and they really do seem to be more likely to try new foods when they are allowed to assist in the process.
I spend most of my spare time reading great books and doing a lot of writing. I am currently working on a cook book and a book about my own personal Eat Clean journey, in which I have set a year-long goal to lose 80 pounds from weight training and eating clean.
