6 broiler-fryer chicken pieces - leg, thighs or breasts
Preparation - Whisk the lemon juice, honey, vegetable oil, grated lemon peel, salt and pepper together. Spray a shallow glass baking dish with non-stick cooking spray. Place the chicken in the prepared baking dish. Add the sauce and turn the chicken pieces to coat. Marinate for 20 minutes. Prepare a charcoal or gas grill for use. Remove the chicken from the marinade and place the chicken on the prepared grill. Brush the chicken with the marinade, turn the pieces over and grill for 15 to 20 minutes. Brush with marinade, turn the pieces over and grill on other side for 15 to 20 minutes or until until the chicken is tender and juices run clear. Discard any remaining marinade.
