Sesame Crusted Chicken
Yield: 6 servings
1/2 cup all-purpose flour
Eggbeaters, equivalent of 2 eggs
1/2 cup Panko bread crumbs
1/4 cup sesame seeds
2 tsps dried thyme
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
6 boneless, skinless chicken breast halves
(1-1/2 lb total), pounded to 1/2-inch thickness
2 Tbsp sesame oil
Place the flour in a shallow dish and the eggs in another
shallow dish; in a third shallow dish, combine the panko crumbs,
sesame seeds, thyme, garlic powder, salt, and pepper; mix well.
Dip the chicken into the flour, then the eggs,
then the bread crumb mixture, coating evenly with each.
In a large skillet, heat the oil over medium heat. Saute the
chicken in batches for 4 minutes per side, or until no pink remains.
