Roasted Vegetable Pizza Recipe

Pizza has long been a kid favorite meal. Instead of ordering pizza in, why not try your own healthy version with your kids? Substituting low fat cheese and a few vegetables cuts down on the calories, fat, and sodium, but not the taste!

Creating pizzas together is the perfect recipe for cooking with your kids. If your family has different tastes, simply divide the pizza dough in half or thirds, and then place the toppings accordingly.

Ingredients:
Directions:
  1. Pre-heat the oven to 400 degrees.

  2. Spray a cookie sheet or pizza pan with a non stick cooking spray. If you don't have either, overlap two sheets of tin foil to create one large “sheet”.

  3. Sprinkle a layer of cheese on the pizza dough.

  4. Spread a layer of pizza sauce over the cheese.

  5. Add the chopped onions, bell peppers, mushrooms, basil, and oregano to the pizza dough.

  6. Add the remaining cheese, and top with the diced tomatoes and chilies.

  7. Bake at 400 degrees for thirty minutes, or until pizza is cooked throughout.
