Recipe for Broccoli and Penne Pasta With Parmesan Cheese

This is delicious vegetarian pasta dish that my kids love. And it's a great way for parents to step away from the time-consuming tradition of making each child a different "a la carte" meal selection. With this meal, you won't have to, because everyone will eat it!




Ingredients:

1/2 pound (or 8 ounces) uncooked penne or ziti pasta

One full head of broccoli (I actually prefer to make this dish with two!)

3/4 cup olive oil

8-10 cloves garlic, minced in a garlic press

Coarse black pepper, to taste

4 tablespoons (1/2 stick) butter

1/2 cup - 3/4 cup Parmesan cheese (freshly grated makes a difference, if you have the time)



Directions:


  1. Cook the pasta according to the direction on the box.

  2. Cut the stems off the broccoli florets.

  3. Steam the broccoli for 6 minutes, or until easily pierced with a fork, but still bright green.

  4. Meanwhile, heat the olive oil in a large skillet over medium heat.

  5. Add the garlic and cook for 30 seconds. (Be careful not to burn the garlic.)

  6. Add the broccoli, pasta, and butter. Stir.

  7. Add the Parmesan cheese and stir.

  8. Serve immediately!
