I am a sucker for a classic cocktail and fortunately for me there are so many types to choose from! There are martinis and Manhattans’ , juleps and sours, Tom Collins's and cosmopolitans. Then, there are the creamy ones like a rich Brandy Alexander or a good old fashioned minty Grasshopper! I love these the best, because in the right glass, with the right company they feel so very glamorous. I love to drink them watching old movies with my husband on a chilly night and I've made and served them for Oscar parties where they feel incredibly appropriate! This is my twist on a good old fashioned Brandy Alexander. I've added Amaretto which gives this cocktail a sunny almond flavored sweetness, almost like an Italian nougat bar. For those who like hazelnuts, I think that this would be just as wonderful flavored with Frangelico, that delectable hazelnut flavored liqueur.
You will note that one of the components in this drink is one raw egg white. I only use organic eggs in my cocktails for the pure and simple reason that I believe that they are safer then factory farmed ones. Egg white, when combined with the whipping cream and shaken with ice and the other ingredients provides an unexpected depth and richness to this drink. I think that it’s fine to not use the egg white if you are truly opposed, but the drink won’t be nearly as thick. It will still be delicious though, just a bit more along the lines of a white Russian or a Baileys and Cream. I hope that you will take my word for it and try this just once with the egg white. I promise that you won’t even know it’s there!
So break out the old fashioned saucer champagne glasses that were your grandmothers and let’s get started!
You will need:
I jigger of fresh organic whipping cream ( I really do like to use cream without additives, I think that it provides a better flavor!)
1 fresh, organic egg white
½ jigger of white crème de cocoa
1 jigger of Napoleon Brandy
½ jigger of Amaretto
Place all ingredients in a metal shaker with Ice that is very cold. I prefer a metal shaker for this drink instead of a glass and metal combination as I think that the drink chills and thickens faster. Shake very rapidly for about 4 minutes and strain into one large or two smaller glasses! For a garnish, thinly shaved dark chocolate would be delicious floated on the top!
