6 whole wheat flour tortillas
2 pounds extra lean ground hamburger, chicken, or turkey
3 cups healthy spaghetti sauce, jar or home made
1 package fresh sliced mushrooms
½ cup shredded mozzarella cheese
½ cup grated hard Parmesan cheese (good quality)
½ small onion, minced
Grape seed or Extra Virgin Olive Oil (spritzer bottle type)
Sea salt and fresh cracked black pepper to taste
Additional “Topping” Ingredients:
Red pepper flakes
Bell peppers, sliced or minced
Jalapeno, sliced, seeds removed
Bacon, nitrate/nitrite-free (Oscar Meyer), cooked and chopped
Zucchini, grated or sliced thin
Any variety of garden fresh veggies
Lean ham, chopped in thin strips
Chicken breasts, grilled, sliced thin
*Before getting started: Line a large baking/cookie sheet with parchment paper. Spritz the parchment paper with a few sprays of oil. Set aside. Preheat oven to 400 degrees.
1) In large skillet, brown sliced mushrooms in 4 spritzes of oil over medium heat for 4 minutes. Add in minced onion , cook for an additional 3 minutes. Add in the ground beef or poultry, stirring constantly to break the meat up. Cook over medium heat for about 7-9 minutes more. Add a few pinches of sea salt and fresh black pepper to the pan. Stir well to incorporate.
2) Add the spaghetti sauce to meat mixture. Stir well over medium heat and bring to a slow boil. Turn down heat to low, and cover with a tight lid. Simmer for 25 minutes. Remove lid from pan, stir, and continue simmering on low for an additional 15 minutes. Allow sauce to cool for 30 minutes before using.
3) Place a whole wheat tortilla, flat, onto the oil-spritzed baking sheet you prepared earlier. Scoop out about ¾ cup meat/sauce mixture onto tortilla. Over the top of meat mixture, spread the grated/shredded cheese combo, and any other “topping” ingredients you like. Roll into a burrito, making sure to fold sides in first. Arrange each burrito onto the cookie sheet, with the same amount of space in between each burrito.
4) Top each rolled up burrito with a couple of spoonful's of spaghetti meat sauce and cheese mixture, and any other veggie that you'd like. Place in 400 degree preheated oven and bake uncovered for 20-25 minutes, until tortilla is lightly browned. To impress your guests, top each Pizza Burrito (Pizzaritto!) with pretty fresh basil leaves. Enjoy!
