Green Tomato Chutney - 8 pounds firm green tomatoes
- 1 cup chopped onions
- 1-1/2 cups brown sugar, firmly packed
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. minced garlic
- 1/4 cup mixed pickling spice
- 3 cups cider vinegar
- 1 pound golden delicious apples ( about 3 medium size apples)
- 1 cup golden raisins
- 3/4 cup granulated sugar
Preparation - Trim the stem and blossom end from the tomatoes. Chop the tomatoes into 1/2" to 3/4" cubes. In a large stockpot, mix the cubed tomatoes with the chopped onions, brown sugar, salt, pepper, garlic, pickling spice, and cider vinegar. Bring the mixture to a boil, stirring constantly. Reduce heat, then simmer, uncovered, for about 3 to 4 hours, or until thickened. Stir occasionally while cooking. Meanwhile, core and chop the apples into 1/2" cubes. In a saucepan, mix the cubed apples with the raisins and granulated sugar. Cook over low heat for about 20 to 30 minutes, stirring often, until the apples are softened, but not mushy. Stir this fruit mixture into the tomato mixture (after the tomato mixture has finished cooking). Ladle the hot chutney into hot, sterilized pint size canning jars, leaving 1/4" head space. Wipe the jar rims. Place metal caps on the jars and screw on the bands. Process for 15 minutes in a boiling water bath canner. Cool, check the seals, label and store in a cool, dark place. Jars of this chutney should be refrigerated after opening. Makes about 8 pints.
