Spinach is loaded with iron and Popeye got it right. This vegetable, fresh and frozen has totally different taste than found in cans. Spinach has Vitamins E and C, and surprising a lot of fiber than other vegetables.
Peppers,red and green, are chock full of important nutrients for your body. You can find them hot,sweet and in between. All peppers have Vitamins A,C and K. They also have lycopene which has cancer preventive powers.
Garlic is another cancer fighting vegetable. Again the more you use, the more flavor you will get in this dish.
Sesame Broccoli, Red Pepper And Spinach
1 tablespoon sesame seeds
1 teaspoon canola oil
1 bunch broccoli, cut 1" florets, stems peeled, cut 2" by 1/4" strips
1 red bell pepper, cut into thin strips
1 green bell pepper, cut into thin strips
1 garlic clove, pressed
1 10 oz. bag washed spinach
1 small hot red chile or jalapeno pepper, seeded, finely chopped(optional)
1 tablespoon light soy sauce
2 teaspoons sesame oil
Toast sesame seeds in a large nonstick skillet over medium heat, stirring until golden brown and fragrant then transfer to a small bowl.
Heat oil over medium heat in same skillet until hot. Add broccoli and peppers; cook until broccoli is crisp-tender, about 5 minutes. Add garlic, spinach, jalapeņo,light soy sauce, and sesame oil; mix well. Cover and cook until spinach is wilted, about 2 minutes. Sprinkle with toasted sesame seeds.
