Broiled Mozzarella-Topped Tomatoes

Broiled Mozzarella-Topped Tomatoes

  • 3 large red tomatoes, sliced 1/2" to 3/4" thick
  • 1 T. olive oil
  • 1 tsp. salt
  • 2 T. Oregano
  • 1 lb. shredded mozzarella cheese

Preparation -
Line a broiler tray with foil. Spray foil with nonstick cooking spray. Lay tomato slices on foil. Sprinkle with salt and oregano. Sprinkle cheese over tomatoes, dividing evenly. Broil for about 4 minutes or until cheese is melted and barely beginning to brown.
