Chocolate Raspberry Parfaits

Chocolate Raspberry Parfaits

Use fresh or frozen red raspberries to create a decadent chocolate raspberry dessert that looks just as fabulous as it tastes!

  • 1 cup sugar
  • 1/4 cup cocoa powder
  • 1/3 cup cornstarch
  • 1/4 tsp. salt
  • 3 cups milk
  • 3 egg yolks, lightly beaten
  • 2 T. butter
  • 1-1/2 tsp. vanilla
  • 1 box fresh red raspberries or 1 pkg. (10 to 12 ounces) frozen red raspberries
  • 1 container (8 ounces) frozen whipped topping, thawed
  • whipped cream, of extra whipping topping for garnish

Preparation -
Prepare the pudding - In a heavy saucepan, combine the sugar, cocoa, and salt and stir to mix well. Whisk in the milk and egg yolks. Cook over medium heat, until boiling, stirring constantly. Continue to boil for one minute, stirring constantly. Remove from heat. Stir in the butter and vanilla. Cover the surface of the pudding with plastic wrap, then set aside to cool.

If using frozen raspberries, drain. Rinse fresh raspberries under cool water. Puree the raspberries in a food processor or blender. Pour the pureed berries into a mixing bowl. Fold the whipped topping into the pureed berries. Layer the cooled chocolate pudding and the raspberry mixture in 8 individual parfait or tall dessert glasses, beginning and ending with the chocolate pudding. Cover and refrigerate until chilled and set. Top individual parfaits with a dallop of whipped cream or whipped topping just before serving.
