Broccoli Quiche

Broccoli Quiche

  • 4 eggs, beaten
  • 1 cup milk
  • 2 T. chopped onions
  • 1/2 tsp. thyme
  • 1/4 tsp. salt
  • 1/2 cup chopped broccol, fresh or frozen
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 4 tomatoes ( medium size), sliced
  • 1 prepared pie crust

Preparation -
Combine beaten eggs, milk, chopped onion, thyme and salt. Set aside. Place chopped broccoli and both cheeses in a pie crust lined pan. Pour the egg mixture over top. Bake for 45 minutes at 350 degrees or until light golden brown. Arrange tomato slices on top. Broil for one to two minutes.
