Maple-glazed Brussels Sprouts with Bacon


Brussels Sprouts are lightly browned with onion and bacon, then lightly glazed with maple syrup.

  • 4 strips bacon
  • 1 medium onion, finely chopped
  • 1 lb. fresh Brussels Sprouts
  • 2 T. butter
  • 1/4 cup maple syrup
  • salt and pepper

Preparation -
Trim the Brussels Sprouts and rinse thoroughly under cool running water. Cook the Brussels Sprouts until tender, then cut each one in half; set aside. Cook the bacon until crisp. Remove from the pan, drain, and crumble into bits. Saute the onion in the bacon drippings until the onion is transparent and barely tender. Add the cooked Brussels Sprouts and saute just until very lightly browned. Stir in the bacon bits, butter and maple syrup and simmer until heated through. Add salt and pepper to taste, just before serving.
