Sweet Potato Biscuits

Sweet Potato Biscuits

  • 4 cups flour
  • 1 tsp. salt
  • 2 T. baking powder
  • 1 cup butter, cut into pieces
  • 1 cup cooked, mashed sweet potato
  • 1 cup buttermilk
  • 1 Tbsp. sugar
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice

Preparation -
Combine flour, salt and baking powder. Add butter and mix until crumbly. Add the remaining ingredients and stir until blended. Place dough on a floured surface and roll out to 1/2- inch thick. Cut with a biscuit cutter or a round cookie cutter. Place on a greased cookie sheet. Bake at 400° for 15 minutes or until lightly browned.
