Atkins has a ready-made pancake and waffle mix that is 3g per serving. You get 4 full sized pancakes for that amount!
The mix is easy enough to use. Blend together 1/2 cup of the mix with a Tbsp oil, 2 eggs and 1/3oz water. Then just cook as you would normal waffle/pancake mix and enjoy.
While this mix is sweetened with Splenda, there is a bit of off-taste, almost metallic, when you take your first bite. The off taste vanishes after that and it tastes normal. We normally have our pancakes covered with low carb syrup, and often mix in zero-carb dark chocolate bits and sprinkle zero-carb dark chocolate shavings over the top. If you enjoy low carb jams and jellies, those work equally well. So really, with all of that on the pancakes, I don't even taste the off-taste at all.
On the down side, it might be hard for you to find this unless you buy it right from the Atkins website, and the container doesn't reseal. So you have to store any leftover mix in a zip-lock or Tupperware until the next time you use it.
Well recommended if you're interested in having pancakes or waffles while you are doing low carb!
January 2007 Update:
Atkins discontinued their pancake mix, but they sold the recipe to New Hope Mills. You can now find this mix sold under the name New Hope Mills Sugar Free Pancake & Waffle Mix. We are very lucky that the recipe is still available! The mix still has 0g of sugar and only 3g of net carbs.
May 2009 Update:
The item is still available in May 2009 on Amazon.com. Low carbers rejoice that we still have an option available for making pancakes and waffles that are not chock full of sugars and starches!
