Pirmin Kummer has created the Eco-Spud which has been tested by the Prince Edward Island Food Technology Centre. This new variety of potato has a full 30% fewer carbohydrates than its high carb siblings.
Potatoes have become a staple of many diets, between french fries, baked potatoes, mashed potatoes and potato chips. However, most of the ways that people eat potatoes are highly UNhealthy. Potatoes are healthiest when eaten with the skins, without being fried or salted. Even so, they are CHOCK full of starch and sugar.
A half cup serving of white potato can have 14g of carbs in it - whle a half cup serving of broccoli only has 1.7g of carbs and is far more nutritious. Even if a lower carb version of potatoes has only 10g of carbs, this is not a "health food" that should be eaten daily in the form of chips and fries! A healthy diet includes a wide range of healthy vegetables, such as broccoli, cauliflower, asparagus, spinach and garlic.
