This flavorful, delicious, protein-rich recipe features turkey Italian sausage with pepper, garlic, red wine, and onion. It's low carb and tasty!
6 turkey Italian sausages
5 garlic cloves
1/2 red pepper
1/2 green pepper
1/4 cup red wine
3/4 cup water
crushed red pepper
Start by cutting the onion into long, thin strips. Fry it in olive oil until it becomes translucent. Put it aside in a bowl.
Add in more olive oil and fry the sausages. You want to do about a minute on each side, all four sides, at medium to high heat to brown a stripe onto each side. Tongs are best for turning these.
Chop up the garlic cloves. Put those on the side of the sausages to cook them. Chop the pepper into slices and put those along with the onion on top of the sausages. In about 3-4 minutes the garlic will be done.
Now add in 1/4 cup red wine and stir everything together. Then add in 3/4 cup of water. Add a dash of basil, oregano, crushed red pepper, salt, and pepper to taste.
Put a cover mostly over the top, reduce to simmer, and let sit for about 45 minutes. At that point remove the cover and turn up the heat until the liquid consistency is more like a gravy than a soup.
The garlic in this will really depend mostly on the sausage you get. Sausage comes in a wide range of carb counts, depending on what style you get. It's well worth shopping around to find one that is as low-sugar as possible. Also, try to find one without nitrates or nitrites if you can. The fewer preservatives you ingest, the better!
This is a delightful low carb meal which can be eaten on its own, or along with a nice, crisp salad.
You can buy a pre-made bag of pepper slices to make this easier if you wish. You can also buy pre-chopped garlic cloves.
