Smoothies are a great way to get healthy spinach, carrot, and other veggies into you in a way that tastes delicious. This smoothie recipe involves banana and strawberry.
Note that I show the gram weights to show how it ties into my nutrition calculations. You don't have to match my weights :). If you record your own ingredient weights, you can plug it into the attached spreadsheet to see exactly what your shake's values are.
1 banana - 128g
1 carrot - 48g
1 cup unsweetened almond milk - 234g
3/4 cup strawberry - 450g
1/2 cup spinach - 30g
1 inch cucumber - 65g
1 scoop vanilla protein - 35g
2 Tbsp peanut butter - 32g
1 Tbsp agave - 20g
ice to desired consistency
We have a Blendtec blender so we can just toss all of these ingredients into the blender and let it rip - it churns through it all and creates a delightful smoothie in a minute or so. If you have a blender that has trouble with ice, put in a little at a time for it to deal with, or consider pre-crushing the ice with a hammer before you put it into the blender.
This ends up making two large pint glasses of servings.
As an added decoration, we did a swirl with sugar-free chocolate syrup on the top. That of course is optional :).
Each serving has:
total carbs: 43.4g
net carbs: 36.3g
vitamin C: 188.1
For us, the cost per serving is $1.85. Most of that is the strawberries. So that price could drop quite a lot if you were somewhere they were in season and inexpensive.
As you can see, this isn't a smoothie you'd want to be making during your first two weeks of going low carb :). It's got too many fruit sugars in it for that. However, for those of us deeper into low carb, with higher daily values, this can be a delightful treat. It provides great protein, nutrition, and flavor.
