2 large apples - peeled and cubed (about 1/2" cubes)
2 T. vegetable oil
Confectioner's sugar
Preparation - Mix the flour, baking powder and cinnamon together; set aside. In a separate bowl, beat the eggs lightly. Stir in the milk. Add the cubed apples. Add the dry ingredients to the apple mixture and mix well. Pour in vegetable oil in a skillet. If using an electric skillet, set the temperature to 375º. Drop the batter by heaping tablespoons full onto the skillet and fry until golden brown. Drain on a white paper towel lined plate. Sprinkle with Confectioner's sugar before serving.
