Berry Cobbler

Berry Cobbler

  • 5 cups berries (any combination of or blueberries, raspberries, blackberries, or sliced strawberries)
  • 1/3 cup sugar
  • 1 T. flour
  • 1/4 tsp. lemon juice
    Batter:
  • 1-1/2 cups flour
  • 1 T. sugar
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 4 T. butter
  • 1 cup buttermilk

    Preparation -
    In a 10" glass pie plate or round baking dish, mix together the berries, sugar, flour and lemon juice. Bake at 375° for 30 minutes, stirring once, abour half way through baking time. Remove from the oven and set aside.

    In a medium sized bowl, stir together the flour, sugar, baking powder and baking soda. Cut the butter into the mixture. Stir in the buttermilk, just until the mixture is moistened. With a large spoon, drop about six mounds of the dough mixture over the baked fruit. Lightly brush the top of the dough with milk (optional). Bake at 375° for 20 minutes.
