Preparation - Pour the buttermilk into small mixing bowl. Stir in the baking soda; set aside. Sift the flour, baking powder, salt and brown sugar together; set aside. In a large mixing bowl, beat the 3 egg yolks. Add the buttermilk mixture and melted butter. Add the flour mixture and stir until blended. Stir in the blueberries. In a separate bowl, beat the 3 egg whites, adding the sugar gradually until stiff peaks form. Fold the beaten egg whites into the batter. Fry in canola oil on a hot skillet or griddle until light golden brown.
