Date-Nut Bread

  • 2 cups pitted, chopped dates
  • 1-1/2 cups boiling water
  • 4 cups flour
  • 1 cup sugar
  • 1 cup dark brown sugar
  • 1 cup finely chopped cup pecans or walnuts
  • 1/2 cup margerine, softened
  • 3 tsp. baking soda
  • 1-1/2 tsp. salt

Preparation -
Pour the boiling water over the chopped dates. Let the dates soak for about 1 hour. Generously spray two - 9" x 5" x 3" loaf pans with non-stick ccoking spray; set aside. In a mixing bowl, combine the flour, baking soda. and salt. Add the sugar, brown sugar and margerine and mix until blended. Add the nuts and the chopped date/water mixture. Stir until the dates and nuts are distributed evenly and the dry ingredients are completely moistened. Divide the batter in half and spread evenly in the loaf pans. Bake at 350° for about 1 hour or until a large toothpick inserted in the center comes out clean.
