Soy Bean Nutrition

I realize that a lot of low carbers turn to soy beans as a miracle food. Here is information on the soy bean - as well as some research into its health implications.

Soybeans are used in many oriental dishes. Soybean is the basis of miso soup and tofu, a bean curd. They have about 19g per cup. They look like round white "nuts" in a green pea-pod. I still remember one time I was served them in a Japanese restaurant and thought the pea-pod was edible :) It's not!

Numerous studies have been done on soy over the years. Many have found issues with soy and health. Soy can for example block zinc from properly being used by the body. Zinc is critical for reproductive health and brain functioning.
