One-Dish Italian Fish - Microwave Recipe

Oh my! This dish is incredibly easy, delicious, and has little clean-up. A perfect dish when cooking for one or two.

One-Dish Italian Fish

Directions

  1. In a microwave pan, mix the bell pepper, bruschetta topping, corn, oregano, parsley, black pepper, and 1/2 Tbs olive oil together.
  2. Brush the fish on both sides with the remaining olive oil.
  3. Place the fish on top of the tomato-corn mixture, with the thin ends toward the middle of the dish.
  4. Cover with cling wrap and microwave on high for 7 minutes.
  5. Set the fish aside for 3 minutes. It will continue to cook in its own heat.
  6. Cut the lemon into wedges.
  7. Serve the fish with the vegetables, with the lemon wedges on the side.

Note: Flounder is found off the coast of the US and Canada in the Atlantic ocean. Flounder also lives in the Pacific ocean. The flounder in European and Japanese waters are distinct species of the fish. One "American" flounder is known as Winter Flounder and is the most common shallow-water flatfish in North America. The secret to cooking flounder is not to overcook--okay, that's the secret to cooking most fish. If you don't have a great seafood store in your area you can buy frozen flounder and defrost as needed.
