Preparation - In a large bowl beat the oil and sugar with electric mixer for 2 minutes. Add the eggs and vanilla and beat for 1 minute. In a separate bowl stir together the flour, baking soda, cinnamon and salt. Add this to the creamed mixture and stir just until the dry ingredients are moistened. Stir in the apples, raisins and walnuts. Place paper cupcake liner in a 12 cup muffin tin. Spoon the batter into the cups, about 3/4 full. Bake at 400° for 25 to 30 minutes. Remove the muffins from the tin to cool on a wire rack.
