Frosted Low-fat Chocolate Brownies

  • 1/2 cup plus 3 T. low fat soft margarine
  • 1 1/3 cups sugar
  • 8 egg whites
  • 1/2 cup low fat sour cream
  • 1/3 cup evaporated skim milk
  • 2 tsp. vanilla
  • 1 1/3 cup flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 cup cocoa powder

    Preparation -
    With electric mixer, beat margarine at medium speed until fluffy. Gradually add sugar and beat well. Add egg whites, sour cream, milk and vanilla; beat well. Stir baking powder, salt and cocoa together in a small bowl. Add flour mixture to creamed mixture and stir all together until all ingredients are moistened. Spray a 9" x 13" baking pan with non-stick cooking spray. Pour brownie batter into pan. Bake at 350º for 25 mins or until a toothpick inserted in center comes out clean. Cool brownies in pan on a wire rack. Spread frosting on cooled brownies and cut into squares.

    Creamy Chocolate Brownie Frosting

  • 3 cups confectioners sugar
  • 1/4 cup unsweetened cocoa
  • 1/4 tsp. salt
  • 1/4 cup 1% milk
  • 1 1/2 tsp. vanilla

    Preparation -
    Combine all ingredients; Mix to a spreading consistency.
