Years ago, eggs were part of the standard farmhouse breakfast. People who worked in the field needed a high quality protein, and eggs from the hen house were just the thing for those busy farmers. As times changed, and people became more sedentary, eggs got a bit of a bad reputation for the cholesterol that they have in the yolk. Times are changing again, and people are starting to see that eggs can be part of a healthy diet.
Eggs are affordable. Pound for pound, eggs cost less than most meats. In addition, an egg only has 70 calories. Eggs also contain 6 grams of complete protein per egg. Vitamins and minerals are found in eggs. Within the tiny confines of the egg white and yolk, eggs contain between 4 and 10 percent of a person’s daily nutrition in these areas: Vitamins A and D, iron, riboflavin, B-6 and B-12, folate, phosphorus, and zinc. With all of this nutrition, eggs are delicious, too. They make outstanding sandwiches for any time of the day! Here are some ideas for that perfect egg sandwich.

*Egg omelet made with onions, peppers, sausage, and cheese in a tortilla wrap with lettuce, tomato and salsa.
*Egg salad rolled up into a thinly sliced piece of Black Forest ham with a shaved pickle slice from a Claussen Kosher dill.
*Egg scrambled with sautéed mushrooms and onions, and then layered with thin sliced ham and Swiss cheese in a wrap.
*Egg omelet made with diced ham, onion, cilantro, poblano pepper, and Swiss cheese on an English muffin with lettuce and thin sliced tomato.
*Egg salad on a grilled cheese with ham.
*Eggs scrambled with bacon bits, green peppers, onions, and sausage wrapped in a flour tortilla with crispy fried potatoes, cheese, and salsa.
*Eggs scrambled with sautéed broccoli, onions, peppers, and mushrooms, and then layered on a toasted French roll with cheese and bacon.
