Sandwich Meatloaf Recipe

My family loves meatloaf that is prepared the way that my mom used to make it. While Mom never used a recipe, her meatloaf always had soft-cooked onion, bell pepper, and celery in it for extra fiber and flavor. It is my favorite Sunday meatloaf, but sometimes I just crave a meatloaf sandwich. However, often I don’t have time for hand chopping the vegetables or cleaning the food processor. The beauty of this meatloaf is that it takes about ten minutes from finding the ingredients to popping the meatloaf into the oven.

Sandwich Meatloaf Recipe

Ingredients:

1 pound of 85% lean chuck burger (or use buffalo burger)
1 cup panko bread crumbs (I used Progresso brand.)
1 egg
˝ cup catsup (I used Hunt’s without high fructose corn syrup.)
1 tablespoon of dried parsley, crumbled
1 teaspoon dried onion flakes
˝ teaspoon celery seed
1 teaspoon Greek seasoning (I used Cavender’s.)
˝ teaspoon Lawry’s Seasoned Salt

Method:

Preheat the oven to 350 degrees F.

In a medium bowl, add the bread crumbs, egg, catsup, parsley, onion flakes, celery seed, Greek seasoning, and seasoned salt. Crumble the burger evenly across the top and start mixing the ingredients together with your hands. I use a squeezing motion. Work the mixture with your hands until the bread crumbs, egg, and seasonings are mixed completely into the meat. Shape the meat into a log that will slice well into the size of sandwiches that your family enjoys. Place the meatloaf mixture into a covered dish. Bake for one hour.


Meatloaf sandwich variations:

Italian Wrap: On a fresh flour tortilla, sprinkle a shredded Italian cheese of your choice. I love to use an Italian blend. Microwave the tortilla until the cheese just starts to melt. Crumble ˝-1 cup of the warm meatloaf down the middle of the tortilla. Drizzle it with warm marinara sauce. Add fresh spinach or basil leaves. You might also enjoy putting sliced olives and marinated mushrooms into the wrap. Roll it up and slice it on the diagonal. So good!

Southwestern Wrap: Sprinkle shredded Mexican cheese blend onto a fresh flour tortilla. Microwave the tortilla until the cheese just starts to melt. Crumble ˝-1 cup of the warm meatloaf down the middle of the tortilla. Spoon on Jack’s Special Salsa, or use your favorite salsa. Add shredded lettuce, cilantro, thinly sliced onion, and chopped tomatoes. Roll your wrap up, burrito style, and serve it on a warm plate. You can also slather on a bit of guacamole or serve the guacamole with your favorite corn chips.

Classic Meatloaf Sandwich: On a bakery hamburger bun, fresh white bread, or sourdough, spread mayonnaise, catsup, or your favorite meatloaf condiment. Add the sliced meatloaf and close the sandwich. It’s just that simple!
