Homemade Roast Beef Sandwich Recipes

Deli meats, like DiLussoís excellent line of flavored roast beef, are a great convenience. Sometimes you have a yearning for a real, homemade roast beef sandwich. This recipe produces a tender roast beef that is great for those juicy sandwiches. I included two sauce recipes. Feel free to experiment with them. Or you may use your favorite sauces to make creative sandwiches.

Homemade Roast Beef


2-3 pound rump or round roast (Make sure that it has a pad of fat on it for flavor and moisture.)
Worcestershire Sauce
Onion powder
Garlic powder
Pepper (I used a finely ground pepper.)


Preheat the oven to 425 degrees F.

Heat a heavy Dutch oven, and add the meat. You may add a bit of oil, if desired. I brown it without oil. Brown the roast until it is dark brown, then turn it to a side that hasnít been browned. Continue this until all sides have been browned except for the fat pad. Position the roast with the fat pad up. This is important! Having the fat pad on top adds flavor and moisture to the roast. Sprinkle it with Worcestershire sauce, onion powder, garlic powder and pepper, to taste. Pour 1 Ĺ cups of hot water into the pan, being careful not to pour it over the meat. Cover the pan and place it into the center of the oven. Turn the heat down to 350 degrees F. Roast the meat for 2-3 hours, until a fork pierces the meat easily. After an hour, check the water level. Add hot water as needed to keep the pan from boiling dry. Water keeps the meat moist.

After the roast is cooked, refrigerate it until it is completely chilled. Overnight works well for this step. When it is completely chilled, use a serrated knife to slice the roast into thin slices. Be sure to slice across the grain, since this gives a tenderer slice of roast. The roast is ready to become sandwiches using your favorite sauce and bread.

Beef Sauce


2 tablespoons of mayonnaise
1 teaspoon yellow mustard
1 teaspoon stone ground mustard (I use Inglehoffer.)
2 teaspoons catsup
2 teaspoons Claussen sweet pickle relish
1 teaspoon finely chopped onion (optional)
1-2 drops balsamic vinegar (optional)


Mix all ingredients in a small bowl. This makes enough sauce for two sandwiches.

Horsey Sauce


2 tablespoons of mayonnaise
1 tablespoon of prepared horseradish (I use the Brede brand. You may use less horseradish, if you don't love it like I do!)

Home Made Roast Beef Sandwiches
For two sandwiches:


2-4 ounce Italian rolls or 4 slices of sourdough bread
Non-stick cooking spray
Roast beef to cover the bun or bread (Re-heat the roast in the microwave or in a covered pan on the stove with a little water. Do not overheat.)
Sauce of your choice


If you are using the rolls, slice the Italian rolls horizontally. Using a heavy iron skillet, I grilled my rolls or bread slices with a spray of non-stick cooking spray. Place the rolls or bread slices with the oiled side down into a warm skillet. Cook on medium heat. Watch it carefully until the bread is grilled to a light brown color. Remove the roll pieces or bread from the pan and lay them, ungrilled side down, on a plate to help the bread to keep its crunch. When the bread is cooled, add your favorite sauce to the grilled sides of the roll or bread.

On the bottom roll or bread, layer the roast beef. Cover this with the top of the bun or second piece of bread and press down firmly. Cut the sandwich diagonally into two pieces. You might have a bit of extra sauce to dip your sandwich into!


*Add chopped jalapenos to the Beef Sauce for a spicier sauce.
*Use your favorite barbecue sauce for a tangy sandwich.
*Add sliced or shredded vegetables to the sandwich. Use your favorites. Some of these might include lettuce, spinach, tomatoes, onions, pickles, and coleslaw.

When you want a full-flavored roast beef sandwich, there is no reason to run to a deli. Cooking a roast beef takes time, but not a lot of attention to the task, once it is in the oven. When you are finished cooking the roast beef, you have so many options. Reserve the liquid for soups or gravy. Use the scraps to make soup. You may even use the roast beef for a special family meal. When you make the roast beef, you control the ingredients. Make high-quality meals at your house that taste great!
