Unstuffed Flounder Crabmeat Bake

  • 6 oz. crabmeat, drained and picked clean
  • 1-1/2 cups seasoned croutons
  • 1/4 cup mayonaisse
  • 1 egg, beaten
  • 1 tsp. dried parsley
  • 1 pound flounder fillets - 4 fillets, about 4 oz. each
  • 1/4 tsp. paprika
  • 1 cup French fried onions
  • 2 tsp . butter

Preparation -
Spray an 8" x 11" glass baking dish with non-stick cooking spray; set aside. In a mixing bowl, combine the crabmeat, croutons, mayonaisse, beaten egg, and parsley. Spoon the crabmeat stuffing into the prepared baking dish. Place the flounder fillets on top. Sprinkle the fillets with paprika. Bake, covered, in a preheated oven at 400º for 20 minutes or until the flounder flakes easily with a fork. Top with the French fried onions; dot with butter. Bake, uncovered, for 2 to 3 minutes or until the topping is golden brown.
