Hush Puppies

Version 1

  • 2 cups corn meal
  • 1 cup flour
  • 1 tsp. seasoned salt
  • 1/2 tsp. pepper
  • 1 tsp. baking powder
  • 2/3 tsp. baking soda
  • 1 cup buttermilk
  • 2 medium eggs

Preparation -
Mix dry ingredients together. Set aside. Combine eggs and buttermilk. Add dry ingredients and stir until well blended. Shape, then fry in a deep-fryer or heavy frying pan using a solid shortening such as Crisco. Fry to a very light brown color. Remove and drain on a paper towels before serving.

Version 2

  • 1 cup self-rising cornmeal
  • 1/6 cup self-rising flour
  • 1 1/2 teaspoons sugar
  • 2 T.minced onion
  • 2 T. green bell pepper
  • 1 egg
  • 2/3 cup milk
  • 1/4 cup cooked corn

Preparation -
Mix cornmeal, flour and sugar in a small bowl. Add onion and mix well. Stir in the egg and milk. Let it rest for at least 10 minutes (very important!) Drop by spoonfuls into hot oil.
